Ginger, Ground
This is a good example of the difference between a fresh spice and dried one. Ground ginger doesn’t really taste very much like fresh ginger but has a terrific flavor of its own.
Try the Braised Tuna Ginger Plum recipe with about 1 1/2 teaspoons of fresh grated ginger. The flavor will be more mellow and full bodied. It will be much less spicy than the ground ginger. As with all recipes, neither is ‘right,’ just different.
In a pinch you can substitute about 2 tablespoons of fresh grated ginger for every teaspoon of ground ginger.
