Evaporated Milk
Evaporated milk is just that. It’s milk that has had about 60% of the water removed from it (and you thought it came from evaporated cows). Check the label before you buy. You’ll find evaporated whole milk, evaporated 2% milk, and fat-free evaporated milk.
There are a lot of recipes like the Pumpkin Pie recipe that work well with evaporated milk and it also works well in sauces.
