Brown Rice Pilaf

Ingredients
2 cups No salt added vegetable stock (or water) |
1 cup Brown rice |
1/2 tsp. Salt |
2 tsp. Olive oil |
1/2 medium White onions (minced) |
3 clove Garlic, raw (minced) |
4 Ounce Mushrooms, white, raw (sliced) |
2 Tbsp. Fresh parsley (minced) |
1 lemon yields Lemon juice |
1 to taste Black pepper |
Instructions
In a medium saucepot over medium-high heat, cook oninos until translucent, about 2-3 minutes.
Then add in the mushrooms and garlic, cook for another 2 minutes.
Add in the rice and spices and toast for another 2 minutes, stirring frequently.
Add the lemon juice, vegetable stock, and parsley. Stir, cover with a lid and allow to cook for 35-45 minutes or until rice is tender and liquid is gone.
