Flank Steak with Espresso Rub

4 ounces steak with sauce
Flank Steak with Espresso Rub

Ingredients

3 tsp. Instant coffee powder (instant espresso powder is best)
2 tsp. Olive oil
1 tsp.. Ground cumin
1 tsp. Paprika
1 tsp., leaves Dried oregano
1/4 tsp. Salt
1 to taste Black pepper
8 ounce Beef flank steak
1/4 cup White wine
2 tsp.. Unsalted butter
1 spray Spray olive oil

Instructions

Combine the espresso powder, olive oil, cumin, paprika, oregano, salt, and pepper. Rub the mixture on the flank steak filets. Place the filets on a plate and cover with plastic wrap. Put in the refrigerator and let rest for at least an hour (overnight is best).

When you're ready to cook, place a large skillet in the oven. Preheat the oven to 400°F.

When the oven is hot, spray the pan with oil and add the steak. Cook for about 8 minutes and turn. Cook for another 7 minutes.

Remove the pan from the oven. Place the steak on a cutting board to rest.

Place the skillet over medium-high heat and add the wine. Deglaze the pan by mixing the wine into the drippings and juice from the steak and reduce the mixture by about 1/2.

Add the butter and whisk until the sauce is smooth. Serve over the steak.

Serve this recipe with one of these starch side dishes.

Recipe Notes

This is a fabulous and savory rub for steak. It’s a great idea to keep instant espresso on hand – you can use it in a lot of recipes. (You could use instant coffee granules in this recipe, but the flavor will be much milder.) You could also use a cup of liquid espresso, but you would need to reduce it by about half. Put the espresso in a small pan over medium-high heat and simmer until reduced. Let cool and add the spices and oil.
